We rate this as a medium-hot heat where it's right in between a whoa and a full out hurry up ice cream. Wonderful to spice up any meat as a glaze with a tropical twist.
The recipe uses only chunky papaya puree, pure cane sugar, a bit of citrus pectin to aid in the gelling, plenty of fresh habañero peppers and a generous splash of freshly squeezed lemon juice for a little zing to the flavor in this magical combination.
