Being a huge fan of dark sweet cherries from the Bay Area and going cherry picking in the summer months, I can't imagine a bowl of vanilla ice cream without a huge scoop of bing cherry jam as my topping.
Our delicious jam starts with chunky bing cherries from the Brentwood, CA area. The recipe uses only fresh bing cherries, pure cane sugar, a little citrus pectin for added gelling and a generous splash of freshly squeezed lemon juice for a little zing to the flavor in this magical combination.
