Being a huge fan of dark sweet cherries from the Bay Area and going cherry picking in the summer months, I can't imagine a bowl of vanilla ice cream without a huge scoop of black cherry jam as my topping. Aside from being a sweet cherry variety, these Black Pearls have a deep almost chocolatey flavor.
Our delicious jam starts with chunky Black Pearl cherries from the Morgan Hill, CA area. The recipe uses only fresh black cherries, pure cane sugar, a little citrus pectin for added gelling and a generous splash of freshly squeezed lemon juice for a little zing to the flavor in this magical combination.
