The holiday season has its own special magic—and for us, that magic tastes a whole lot like chai. While it may be frowned upon to leave the Christmas tree up past January, no one’s taking our spiced tea away any time of year. So when winter citrus season rolled around, we knew exactly what to do.
This jam starts with fresh-squeezed mandarin oranges (pulp and all for texture), gently cooked with pure cane sugar, citrus pectin, and a cozy blend of chai spices: ginger, cardamom, cinnamon, nutmeg, black pepper, vanilla, allspice, and cloves.
The result is warm, bright, and deeply aromatic—like the holidays in a jar, but good enough to spread all year long. A short taste test confirmed it: this one’s a keeper.
