French cuisine never ceases to amaze and French preserves are no exception! We were fortunate to try an apricot lavender jam while on our last trip to Paris and knew we had to make that combination for our customers. Truly a jar that we can describe as "France in a jar", the bright and tart Brittany Gold apricots go spectacularly with the floral intensity of lavender without being overly sweet.
Our delicious jam starts with apricots from the Fresno Valley paired with culinary grade French lavender. To the mix, we add pure cane sugar, a little citrus pectin for added gelling and a generous splash of freshly squeezed lemon juice for a little zing to the flavor in this magically intoxicating combination.
