Earl Grey tea has always been one of our go-to comfort flavors—especially with a splash of milk and a spoonful of sugar. That floral orange note you taste? It comes from a citrus gem called the Bergamot sour orange. While most of it ends up in perfumes and essential oils, we were lucky to get our hands on some beautiful California-grown fruit this winter.

To keep the flavor of the tea front and center, we puréed the fruit and set aside the peels, slicing them by hand into long slivers to stir back in during cooking. The result? A soft, spreadable jam-like texture packed with citrusy brightness and delicate floral notes—not a thick-set marmalade, but still with those classic bits of peel.

We start with fresh-picked bergamots from trusted SoCal growers, steep a strong Earl Grey tea concentrate, and bring it all together with pure cane sugar and a little citrus pectin. It’s got all the vibes of a proper tea break—no teacup required.
