The Ponderosa lemon is a curious heirloom citrus, producing enormous fruit with a bright, fragrant flavor that bridges the gap between a lemon and a citron. We start with fresh Ponderosa lemons, carefully preparing the peel and fruit before slowly cooking them into a traditional marmalade with pure cane sugar.
To complement the vibrant citrus notes, we've added delicate calendula petals throughout the marmalade. Often called "the poor man's saffron," calendula contributes a subtle floral character and a beautiful golden appearance that makes every jar feel like a little bit of sunshine.
